A kipper is a fat, juicy herring that has been split, gutted, salted and smoked. Kippers can be grilled, or cooked in a tall jug of boiling water - they don't need long as they are already prepared and just need to be heated through. They were hugely popular in Victorian and Edwardian times for breakfast.
